FREEZE & PRESERVE FRESH HERBS IN OLIVE OIL


Use your freezer to preserve herbs in an ice cube tray. The aroma of the herbs
really infuses the oil in the freezer which is a bonus. It's such a great
way to have herbs immediately ready for your winter
stew, roast, soups and potato dishes.

These dishes usually call for oil to start with, and so you can take a cube of
frozen oil, herbs inside, out of the freezer and use this as the base of your dish.



The oil and freeze method works best with the tough hard herbs such as rosemary,
sage, thyme and oregano. These are all the herbs that would 
probably cooked when adde to a dish.

Soft herbs such as mint, basil and dill are usually added raw to a dish and
thy don't respond as well to the freezer preserving.


If you wish, you can chop them up fine. Or leave them in large sprigs and leaves.


Pack the ice cube trays abut 2/3 full with herbs. Pour in extra virgin
 olive oil or melted unsalted butter. Cover lightly with plastic wrap and freeze over night.


I also did a mix of garlic, rosemary, thyme and 
red peper flakes in another ice cube tray.


And there you have it. Frozen infused herb olive oil.


Remove frozen cubes.


Then store in freezer containers or small bag and stash away in the freezer.
Your always ready for cooking.
