I have to say this chicken is “Rocking It” in the grape sauce! Absolutely love when sweet and savory come together in a skillet. This recipe can be substituted truly with any berry you have avaliable…raspberries, blueberries and strawberries. I may try this recipe with Pork Chops.
2 cups of black or purple seedless grapes, halved.
Four chicken thighs sizzling away. Chicken cutlets would be fabulous too.
Lets get cooking!
In your sauce pan boil your grapes, chicken broth, port. and Dijon mustard about 12 minutes until it thickens. Puree half, then return to the pan.
Place 2tsp. vegetable oil in another skillet. Season the chicken and cook until browned and cooked through. Add sauce and thyme to your skillet. YUM.
Ingredients
2 cups grapes seedless and halved
1 cup chicken broth
1/2 cup port
1tsp. vegetable oil
2tsp. fresh thyme
